Quick. Fast. Easy!

If you’re like me, then you have a crazy hectic life. You get up, rush to work. Work. Work. Work. Rush home. Deal with home stuff. And then pass out in your bed. Repeat ad infinitum.

So it’s no wonder convenience is so popular with the hustle and bustle of every day life. And the most popular convenience of all is: fast food. It’s easy. In 5 minutes you can have a full dinner for an entire family for less than $20.00.  But it’s not a hidden secret that a typical fast food meal can run well over 1,000 calories.

Take these statistics for example:

Calories: 1520

Dairy Queen Large Choc. Chip Cookie Dough Blizzard
Calories: 1320

Del Taco Macho Beef Burrito
Calories: 1170

These calories add up, and they add up fast. But what do you do? How do you prepare a meal for you and you family with zero time?  Well, I can’t tell you how to prepare every single meal, but I can offer one suggestion, that you could possibly build on.

This is a meal I discovered back-in-the-day, when it wasn’t so much time that was affecting my nutritional intake, it was money.  I did some research, and a little creative shopping and came up with the following super healthy meal that I still use today. It only takes about 15 minutes to prepare and about 45 minutes to cook. But don’t worry! While it’s cooking you can go on about your business!

6:00pm – You arrive home

6 :05pm – You grab 4 sweet potatoes, poke them with a bunch of holes, rub them in olive oil, wrap them in aluminum foil and stick them in the oven at 450 Degrees Fahrenheit

6:10pm – You go about your business

6:45pm – Boil a pot of water, cut up some asparagus, and throw it into a steamer carriage placed on top of the boiling water.  If you don’t have a steamer, you can use a metal pasta strainer or any metal container with holes. (One time, I used a metal oil splash screen.)

6:50pm – Grab 4 pieces of frozen tilapia (found in the frozen food section at your local grocery store). Put them on a cooking sheet, drizzle them with a little bit of olive oil, sprinkle with your favorite seasonings and stick them into the oven right next to the sweet potatoes.

7:00pm – Pull everything out of the oven and take the asparagus off the stove. The asparagus should be firm and crispy, the fish flakey, and the sweet potatoes soft enough to push a fork through.

Viola! You have an entire, delicious, healthy meal for you and your family.
